These super tasty parcels of spicy potato make the perfect lunch box snack or meal. They travel well in a lunch box, and are easy to eat hot or cold. Make them ahead and freeze them for fast and easy lunchbox filling.
Using ready-made wraps lets you choose gluten free, whole wheat or white tortillas, and because they're baked not fried, they make a healthy lunch box recipe idea.
INGREDIENTS
- 1 kg (35 oz) potatoes
- 2.5 cm (1") piece of fresh ginger
- 4 cloves of garlic
- 3 tablespoons vegetable oil
- 2 teaspoons ground cumin
- 1/2 a teaspoon fresh chili, chopped
- 1 teaspoon ground tumeric
- Salt and black pepper
- 2 large onions, finely chopped
- 200 g (7 oz) chopped vegetables (fresh or frozen) peas, beans, corn, carrots
- 20 x 20 cm (8") plain tortilla wraps
- 1 handful of fresh coriander leaf
- 1 tablespoon white flour with 1 tablespoon of water, or yogurt, to make a paste
DIRECTIONS
- Preheat oven to 180°C (350°F)
- Peel and cut potatoes into 1 cm (1/2") cubes and boil for 5 minutes. Drain and set aside to cool.
- Fry garlic, ginger, spices, salt, and pepper in oil over medium heat for 1 minute. Add onion and cook until softened.
- Add potato and cook for 5 minutes.
- Mix through diced vegetables and cook for a further 5 minutes.
- Add coriander and set aside.
- Cut each tortilla into four, or leave whole for large samosas.
- Mix 1 tablespoon of flour and a little water or yogurt to a stiff paste and wipe it around the edge of the tortillas.
- Place a spoonful of filling in the middle of each tortilla.
- Fold the two round corners into the middle and close by folding the pointed end down on top. Press to seal the pasted edges together. See the photo on the blog for what this looks like.
- Bake for 5 - 10 minutes on a baking tray until golden. Turn over halfway through so they brown on both sides.
- Cool and freeze them for up to 3 months. Pack them into your lunch box when frozen and they will be thawed by lunch time.
RECIPE NOTE
These delicious little spicy parcels are great made with lots of seasoning to keep them tasty but if you are making them for kids lunches you can reduce the chili, ginger, and garlic.
